This picture I used 500g all purpose, 300g water, 25 g yeast, and salt. Mix in Thermomix for 2 mins.
This is the other recipe that I tried.
25 g dried yeast
350g wheat flour
2 tsp salt
Grind grains 35 sec/speed 10 set aside
place water and yeast into bowl, mix 2mins/37C/speed 2
Add flour and salt, KNEAD/3min/closed lid wheat setting
Place in bowl, cover and let rise in fridge 12 hours or (overnight)
Cut into 4 and roll into baguette shape 30cm long
Cover with kitchen towel and let rest 2 1/2 hours in a warm place
Place baking tray on lowest level of oven and preheat to 240C/465 F
Brush baguette with water and cut slashes across top
Place baguettes into oven and carefully pour a cup of water into baking tray, (creating steam)
Quickly close oven door. Bake for 20-25 minutes.
I cut these and turned them into a bruschetta cracker. Very sturdy.
