Piri Piri Pork via Jamie Oliver adapted for Thermomix

Pork Belly with rind.



Score fat on pork belly.
Grind:
2 Bay leaves
 1 tsp Salt
1tsp olive oil
1 tsp smoked paprika. Rub on pork and leave overnight.
2 small sweet potato, coarsely chopped
1 1/2 onion, coarsely chopped
4 garlic cloves
1 1/2 red pepper coarsely chopped
2 sprigs of fresh Rosemary
Grind  bay leaves, salt , smoked paprika and oil.10 sec/speed 9 and smear onto pork, leave overnight uncovered in fridge
chop sweet potato, red or yellow onions, 4 garlic cloves, deseeded red peppers set aside
Place pork in baking tray
Bake 450 F for 30 minutes, turn down to 275F for 4 hours, add vegetables and place pork on top, place so that cracklings are not submerged.
Add 1 jar of tomato passata, (pureed italian tomato's) 100 ml water and 1/4 C red wine.
scrape up pan drippings and baked vegetables
Place in Thermomix and blend 30 sec/ speed 8, thin with water and add seasonings to taste.
Last 20 minutes place rosemary on top
Pour off oil and save for a rainy day!
Place baked pork on top.
