Thermomix Paneer

2 litres half and half
1 juice of 1 lemon and zest
salt and pepper to taste
Add milk to Thermomix bowl and set 18 minutes/100C/speed 2
Add butterfly and lemon zest stir/ 20 seconds speed 2
Add lemon juice and stir 10 sec/ speed 2
Drain into colander lined with cheesecloth and let stand 1 hour.
Drain and let rest in fridge for 3 monte hours or use a.s.a.p.

This recipe can be made with milk as well.  It is very similar to Ricotta.  You can also add flavouring when adding lemon zest. e.g.. chilli flakes, coriander, garlic etc.
